The owners wanted to franchise into neighbouring towns before a competitor opened similar product lines. Our site visits revealed that sourdough production depended on the founder’s early-morning shifts — a detail absent from their written recipes.

We recommended delaying franchise recruitment until a head baker could replicate the process independently. The territory plan identified three towns with sufficient population density and limited direct competition, sequenced over 18 months rather than the client’s original 6-month plan.

The owners completed staff training changes in September 2025 and began presenting to two qualified candidates in November. Both cited the documented training pathway as a deciding factor.
